  1. Get 8-10 Chicken Drummettes
  2. Make ready Coating (mix well);
  3. Take 3 Tbsp Tapioca Flour
  4. Take 1/2 tsp Salt
  5. Take Sauce;
  6. Get 1 Tbsp Light Soy Sauce
  7. Take 2 Tbsp Lime Juice
  8. Take 2 Tbsp Honey
  9. Get 10 g Garlic (minced)
  10. Get 10 g Ginger (minced)
  11. Take 1 Tbsp Chilli Sauce (optional)
  12. Make ready Thickener (mix well in bowl);
  13. Get 1/2 tsp Tapioca starch
  14. Get 2 Tbsp Water

Instructions to make Chinese Chicken Boxing:
  1. DRUMMETTES; Sever the flesh from the small joint and turn the flesh inside out at the big joint. Coat the drummettes in flour and salt.
  2. FRYING; Prepare 1 cup of cooking oil on medium heat for shallow frying. Fry the drummettes in it's entirety for 6 minutes total. Remove and set aside.
  3. SAUCE; in a sauceapn heat 2 Tbsp of cooking oil on high heat and fry the garlic and ginger until fragrant. Then add the soy sauce, lime juice and honey. Mix well and add the thickener. Cook until the sauce has thickened.
  4. SERVE; Lastly, dip the chicken in the sauce and serve on a plate. Leftover sauce can be used as dipping sauce.
