  1. Get 2 cloves garlic, finely minced
  2. Get 1/2 cup diced onion
  3. Take 3 tbsp. butter
  4. Make ready 1 cup roughly chopped mushrooms
  5. Get 1 1/2 cups chicken broth
  6. Make ready 1 cup orzo
  7. Get Parsley, for garnish (optional)

Steps to make Mushroom Orzo:
  1. In a medium sauce pan, heat 2 tsp. olive oil over medium heat. Add garlic and onions. Cook until onions are soft and translucent.
  2. Add butter, mushrooms, and orzo. Stir well. Cook until butter is melted and mushrooms have softened, about 5 mins.
  3. Stir in chicken broth and bring to a boil. Add salt and pepper to taste. Reduce heat to low and simmer uncovered 10-12 mins.
