The ingredients needed to make Nutty Pork, Prawn and Mega Veg:
  1. Take 1 carrot into thin matchsticks
  2. Prepare 1 courgette into thin matchsticks
  3. Make ready 1 red onion sliced
  4. Prepare 1 head pak choi shredded
  5. Take 1 yellow pepper into matchsticks
  6. Make ready 2 garlic cloves minced
  7. Make ready 1 tbsp curry leaves
  8. Take 1 tsp ginger powder
  9. Get 1 tsp ground coriander
  10. Take 1 tbsp apricot jam
  11. Prepare 2 tbsp soy sauce
  12. Take 1-2 tsp chilli flakes depending on how hot you want it
  13. Get 10 prawns
  14. Prepare 1 large pork chop diced
  15. Take 1 lrg handful cashew nuts lightly toasted
  16. Prepare little bit of fresh mint and coriander to serve

Steps to make Nutty Pork, Prawn and Mega Veg:
  1. Once you have all your veg chopped and ready, this is a really easy chuck it all in recipe.
  2. Heat oil in a pan and add your pork and all the spices, garlic and onion and cook for a few minutes.
  3. Add all your veg at the same time and cook for about 4 minutes.
  4. In a separate pan toast your cashews then remove, then in that pan fry off your prawns.
  5. Once all your veg has softened add the jam and soy sauce, cook for a further minutes then serve.
  6. Add the prawns, cashews and fesh herbs to the top of youtr pork veg mix and serve whilst piping hot.
