  1. Take 1/2 bunch Nira (Chinses Chives)
  2. Prepare 2 eggs
  3. Take 50 ml Dashi (fish broth)
  4. Take 1 Tbsp Soy Sauce
  5. Make ready 1 Tbsp Mirin
  6. Get Bonito Flakes (optional)

Crack the eggs into a large bowl, and add the sugar, salt, Shaoxing wine, white pepper. Instructions to make Nira-Tama (Chinese Chives with scrambled eggs):
  1. Beat the eggs in a small bowl. Cut the nira into 3-4 cm length.
  2. Put Dashi, soy sauce and mirin in a small pan and bring to boil. Add the nira and cook on medium heat until tender (about 1 min.)
  3. Add the eggs in a circular motion so it covers the nira evenly. Wait until it starts to set then quickly bring them to the center with chopsticks or a wooden spoon. Cover and turn off the heat. Let it steam 1 minute or until the eggs are done.
  4. Garnish with Bonito Flakes (Optional) and serve immediately.
